If you removed 2 entire walls and the corner between those two sides last then that roof was too far away from any other supports. Just throw up a 1x1 wooden wall in the center of the room and you should fix the problem. And made sure that my worker where in the right area and not busy but it was impossible to get them to remove the roof i had to use a mod to make the workers remove it.
